Chef, researcher, and educator with 30 years experience developing plant-based cuisine through education and the opening of several restaurants in South America and Europe.

Founder of CRUDO, a pioneering interdisciplinary culinary plant-based studio that combines research, education, and development, training professionals and diners worldwide through its platform.

At CRUDO he leads workshops, does consulting for restaurants, and contributes his vision to the global culinary scene giving lectures related to Sustainable Gastronomy and collaborating with Media and different institutions.

Fronda Pasaje’s wine collection offers a curated selection of local, natural and biodynamic wines, focusing on the richness and diversity of Catalunya´s region. COOKING CLASSES

Crudo Studio’s in-person courses are taught at Fronda Pasaje Culinary Lab, under the direction of Chef Máximo Cabrera.

All classes are focused on direct experimentation and intensive training, ideal for both enthusiasts and professionals.

PRIVATE DINNING & EVENTS

At Fronda Pasaje we offer Gastronomic Experiences for small groups, with 100% plant-based menus designed to surprise and connect through food.

  • Intimate spaces for groups of 8 to 10 people;
  • Capacity for big groups up to 28 guests;
  • Natural and biodynamic wine pairing options available.

We can also bring our Experience to a different location for special events.
